Blackberry YODO
Once school is out for the summer and the number of kids on the farm suddenly increase, ice cream is always in high demand! Amidst the chaos, a single cry for ice cream creates a chain reaction. Our aptly named “Yodo,” (a type of frozen yogurt) born under such testing circumstances is the perfect life-saver for that! Prepared with only a few ingredients and a simple food processor, it will be your go-to ice-cream because not only is it easy to make, but also super healthy, so you can feed it to your kids in good conscience! This Yodo version is made with blackberries, but the strawberry alternative is equally popular, especially among kids.
Ingredients (Makes 6 Popsicles)
Mix blackberries with agave syrup and vanilla extract and process until smooth. Fold the mixture into the yogurt set aside in a separate bowl and blend with a hand mixer until color is even. Add agave syrup to taste. If using a sweeter type of fruit, add lemon rind to balance the sugary taste to give Yodo a fresher zing.
Divide equally among six popsicle molds but do not fill to the rim, as the mixture will expand once it freezes. Place in the freezer for at least 4 hours and serve once they are firmly set.
