Place gelatin sheets in a bowl and add water just enough to cover. Let soften for five minutes. In a separate saucepan, mix milk, heavy cream and sugar. Using a sharp knife, remove vanilla seeds from pod and add to milk along with the pod and heat until it comes to a boil. Remove the milk mixture from heat and take out the pod. Using a whisk, add the softened gelatin sheets and stir until the sheets are melted and evenly blended. Divide the mix equally among your ramequins. Let cool before you refrigerate. Decorate with strawberries, blueberries, and or raspberries before serving.
